Couscous Pilaf
Ingredients:

1 tablespoon margarine

2 tablespoons oil

2 onions, chopped

2 cloves garlic, minced

200g chopped mushrooms

150g peas
-
1 red pepper, chopped

1 tin chickpeas

4 teaspoons tamari
-
2 teaspoons died basil
-
1 teaspoon marjoram
-
1 teaspoon curry powder
-
3 cups vegetable stock

2 cups couscous
Method:

Sauté onions and garlic in margarine and oil until nearly soft.

Add vegetables and sauté for a couple of minutes.

Add herbs, curry powder, tamari, chickpeas and stock.

Bring to a boil, add couscous, stir, return to a boil. Cover, lower heat and
simmer for 2 minutes.

Remove from heat and let sit for 5 minutes. Dot with margarine (if desired) and
stir with a fork to fluff up.
Serves 4
