Couscous Pilaf

Ingredients:

Method:

  1. Sauté onions and garlic in margarine and oil until nearly soft.
  2. Add vegetables and sauté for a couple of minutes.
  3. Add herbs, curry powder, tamari, chickpeas and stock.
  4. Bring to a boil, add couscous, stir, return to a boil. Cover, lower heat and simmer for 2 minutes.
  5. Remove from heat and let sit for 5 minutes. Dot with margarine (if desired) and stir with a fork to fluff up.
