Nut Roast
Ingredients:

4 onions, chopped

5 tomatoes, finely chopped

2 carrots, grated

3 slices wholemeal bread, crumbed

50ml vegetable stock

100g hazelnuts, ground

100g cashews, ground

Salt and pepper
Method:

Grease a loaf tin and set aside.

Fry onions in a saucepan for 5 minutes.

Add tomatoes, grated carrot, breadcrumbs, vegetable stock and cook for 15
minutes.

Add nuts and season to taste.

Spoon into a loaf tin. Bake at 200 degrees celcius for 30 minutes.

Wait five minutes before turning onto a plate and slicing.

Serve with roast potatoes, vegetables and vegetarian gravy.
