Microwave Sultana Sponge Pudding
Ingredients:

225g self-raising flour

100g sugar

1 heaped teaspoon baking powder

100g sultanas
-
225ml water
-
150ml sunflower oil

2 teaspoons vanilla essence

1 tablespoon golden syrup or treacle (optional)
Method:

Sift the flour, sugar and baking powder into a microwave-proof bowl.

Stir in the sultanas. Next stir in the water, oil and vanilla and mix well.

Add the syrup, if using, to the bowl - it will sink to the bottom of the
mixture.

Cover with PVC cling film, piercing a small hole, and cook in the microwave on
full power for 7 minutes.

Let stand for 2 minutes and then remove the cling film and serve.

Great with dairy-free custard, Alpro vanilla dessert or soya ice-cream.
