Simple Vegetarian Chili
Ingredients:

1 tin kidney beans
-
2 tablespoon oil
-
1 onion, diced
-
1 large carrot, diced
-
1 stick celery, diced
-
1 red pepper, diced
-
2 cloves garlic, minced
-
2 large tomatoes, peeled, seeded and chopped

3 tablespoons tomato puree
-
1/2 teaspoon powdered cumin
-
1 1/2 teaspoons chili powder

Salt and pepper to taste
Method:

Drain the beans and set aside.

Sauté the carrots, onions, celery, pepper and garlic in oil for 15 mins.

Add the rest of the ingredients and simmer for 5 mins.

Add beans and simmer for 15 mins.

Serve with rice.
