Walnut Cake
Ingredients:

300g self raising flour
-
1 teaspoon baking powder
-
100g sugar
-
200g walnut pieces
-
200ml soya milk
-
100ml sunflower oil
-
Juice of 1 lemon
Method:

Preheat oven to 190 degrees celsius. Grease a 20cm round cake tin.

Sift together the flour and baking powder.

Stir in the sugar and walnuts.

Mix together the milk and oil and pour in very slowly, stirring continuously
until totally incorporated.

Stir in the lemon juice.

Bake in the oven for 35 minutes or until the top is firm but springy.

Leave to cool completely in the tin.
